Big city chef finds success by going small

There are plenty of dining options in Calgary, but if you’re looking for a more laid-back pace, try heading just north of the city.
Airdrie’s food scene has seen some significant additions in the past few years, including Hayloft restaurant, Fitzsimmons Brewing Company and First&Vine.
Chef Michael Frayne has been working out of the tiny kitchen in a historic home along 1 Ave., next to the United Church, since October 2016.
After working at much larger operations in Calgary, including The Nash, Frayne has had to make some adjustments, adapting to the Airdrie clientele.
“I have definitely become a go-to spot for either a date night or just bringing in-laws from out of town, that kind of stuff, or just come out and stop in for a quick lunch or quick dinner before going off to Crossiron for a movie.”
Frayne says his Vine and Dash quick lunch has also proven popular. He says one of the best parts of being in a smaller community is the collaboration with other businesses like Fitzsimmons and Hayloft. He tries to support local producers, as well, making regular visits to the farmers’ market, just up the street.
